Few times of year are better than strawberry season when you’re in Georgia, and that’s because we’ve got some of the most delicious strawberries out there, right in our backyard. The Pepper-Crusted Steak with Strawberry-Balsamic Glaze and Lavender-Strawberry Shortcake recipes highlight the bright, fresh taste of strawberries that we all look forward to in spring! Our friends at Garnish & Gather will be getting organic strawberries from their pals at Rise N’ Shine Organic Farm in Calhoun, Georgia, but come Saturday morning when you’re browsing stands at the farmer’s market, strawberries will be no feat to find.

The Strawberry Balsamic Glaze that is part of the Pepper-Crusted Steak recipe is a simple yet elegant addition to just about any 
spring dish. Top seared chicken or grilled pork chops with the glaze if steak isn’t your first choice.

Pepper-crusted steak with strawberry-balsamic glaze

Garnish & Gather

+ 2  sirloin steaks

+ ½ Tbsp cracked black pepper

+ ¾ cup strawberries, diced

+ 1 Tbsp sugar

+ 2 Tbsp balsamic vinegar

+ ½ tsp Dijon mustard

+ 1 tsp cornstarch

+ 1 tsp minced garlic

Sear Steak:

  1. Pat steak dry, then generously coat steak with cracked black pepper & salt
  2. Heat 1 Tbsp oil in a sauté pan & cook steaks to desired doneness
  3. Remove & let rest

Make Strawberry-Balsamic Glaze

  1. Heat same pan used for steak (reserving any jus) over medium heat
  2. Add garlic & cook 30 seconds
  3. Add strawberries & cook 2-3 minutes
  4. Dissolve cornstarch in 3 Tbsp water
  5. Add sugar, balsamic, Dijon, cornstarch mixture, salt & pepper to pan
  6. Bring to a boil then reduce heat to low & simmer for 3-4 minutes, until thickened

Lavender-Strawberry Shortcakes

For Two

+ 1 ½ cup strawberries, sliced

+ 1 Tbsp sugar

+ 1 Tbsp lavender balsamic

+ ½ cup flour

+ ¾ tsp baking powder

+ 1 cup heavy cream

+ 1 tsp sanding sugar

+ ½ tsp dried lavender

+ ½ cup mascarpone

+ ½ tsp vanilla

  1. Prepare strawberries by tossing strawberries with sugar & lavender balsamic

Make shortcakes

  1. Preheat oven to 400°
  2. In a bowl, stir together flour, baking powder, ¼ tsp salt & half of cream until just combined.
  3. Drop onto a lightly greased baking sheet to make 2 shortcakes
  4. Sprinkle shortcakes with sanding sugar & dried lavender
  5. Bake for 20-22 min until lightly browned

Whip mascarpone cream

  1. Combine mascarpone, vanilla & remaining cream in a bowl
  2. Whisk or beat until soft peaks form
